The seasoning
According to the published pack listing, the crisps are made from potatoes, sunflower oil and a Thai sweet chicken flavour seasoning: sugar, maltodextrin, salt, dried yeast extract, ground spices (red chilli pepper, fennel, aniseed and clove), natural flavourings, dried onion, dried garlic, citric acid, dried parsley, a chilli powder of chilli, cumin, oregano, dried garlic and salt, red bell pepper powder, and paprika extract for colour.
It is built like a sweet chilli sauce with extra spice. Sugar is the base. The acid gives a sauce like tang. The chilli brings warmth. The fennel, aniseed and clove add a sweet, aromatic depth that sets it apart from a plain sweet chilli crisp. Dried yeast extract gives the savoury note that makes the flavour read as a chicken dish rather than a dipping sauce.
Maltodextrin, the quiet ingredient
Maltodextrin sits second in the seasoning. It is a mild, slightly sweet powder made from starch, and in seasonings it works as a carrier: it bulks out strong flavourings so they can be spread evenly over every crisp, and it helps the powder flow, which helps a seasoning coat the ridges evenly.

Crushed McCoy's Thai Sweet Chicken Crisps doubles as the crumb and the seasoning, so there is nothing else to add.
- 2 chicken breasts, cut into strips
- 1 egg, beaten
- 2 tbsp plain flour
- A sharing bag or two small bags of McCoy's Thai Sweet Chicken Crisps
- Heat the oven to 200C, 180C fan, gas mark 6, and line a tray.
- Crush the crisps finely in the bag or a bowl with the end of a rolling pin.
- Coat each strip in flour, then egg, then press it into the crisp crumb.
- Bake for 15 to 18 minutes, turning once, until the chicken is cooked through with no pink in the middle.
The crisps are already salted, so taste before adding any more salt at the table.

- Salted butter, soft enough to spread
- One bag or a good handful of McCoy's Thai Sweet Chicken Crisps
- Butter both slices right to the edges. The butter is what the crisps stick to.
- Tip the crisps onto one slice in a loose layer, two deep at most.
- Close the sandwich and press down firmly with a flat hand until you hear the crunch give.
- Eat it straight away. A crisp sandwich is a five minute food; after that the bread wins.
